Coffee Cake from a Cake Mix

This is a great cake to bring to a breakfast or brunch potluck.

Ingredients
  

Crumble Topping

  • 1 cup Flour
  • ½ cup Brown Sugar
  • ½ cup Sugar
  • ½ tsp Salt
  • 1 tsp Cinnamon
  • ½ cup Butter (cut to make it easier to blen)

Cake Mix

  • 1 package White or Yellow Cake Mix
  • ½ cup Water
  • 1 egg
  • 1 cup Sour Cream
  • ½ cup Oil
  • 1 tsp Vanilla

Crumble Instructions

  • Use pastry blender to combine flour, brown sugar, sugar, salt, cinnamon, and butter.
  • When combined it should apear crumbly.
  • Cover and store in refridgerator untilready to use. I usually make this the night before.

Coffee Cake Batter

  • Grease a 13 x 9 pan
  • Preheat oven to 350°.
  • With an electric mixer combine cake mix, water, egg, sour cream, oil and vanilla on low speed. Then beat for 1 minute on medium speed.
  • Sprinkle a half cup of crumble mixture on bottom of the pan.
  • Pour half of the batter over the crumble mixture and layer half of the crumble mixture on top.
  • Pour remaining batter over the mixture andput remaining crumble on top.
  • Cook for 30-33 minutes.
  • Let cool for 10 minutes and then serve.
